How it Started

You know that feeling you get when your favorite, absolutely hands-down snack isn’t available anymore?? Think about that food product that you look forward to getting every time you go to the grocery store. How you can’t wait to rip into it when you get home…

Yeah. Mine is gone. My favorite granola bar is Kashi’s Double Chocolate Almond Butter. And they’re still available, but you’ll have to fork over about $13 for a box. YIKES!!

Anyway, you probably get that I really miss being able to enjoy those bars lol.

However, missing them has lit a fire under my butt and totally motivated me to make my own!!

Now I’m not going to lie to you and say they are identical to Kashi’s. But I can honestly tell you that these granola bars are just as GOOD AND CHEAPER!!!

Reasons Why Mine are Better

  1. They are cheaper than the healthy store bought granola bars.
  2. They are healthy. No sugar needed! Just honey 🙂 .
  3. They do not require an oven. This is a no bake recipe.
  4. These granola bars are chewy, not hard and crunchy.
  5. A great finger food for kids!
  6. They don’t break apart! They are so easy to get out of the pan.

What You Need

  1. quick oats
  2. almond Butter (this kind is just almonds and nothing else.)
  3. honey
  4. dark chocolate chips
  5. silicone spatula (so durable and cute!)
  6. 8xll pan

Let’s Get Started

Almond Butter Dark Chocolate Kashi Copycat Granola Bars

Yield: 16 Bars
Prep Time: 10 minutes
Additional Time: 1 hour
Total Time: 1 hour 10 minutes

A chewy no-bake recipe for decadent granola bars.

Ingredients

  • 2 1/2 cups quick oats
  • 1 cup almond butter (just almonds & salt)
  • 1/2 cup honey
  • 1/2 cup dark chocolate chips

Instructions

  1. Grab a baking sheet and pour the oats onto it. Toast your oats in the oven until slightly golden brown. Let them cool.
  2. Place the oats in a bowl. Add in the almond butter and honey. Mix it together. A silicone spatula works well or a large serving spoon.
  3. Chop the dark chocolate chips up roughly so there is chocolate in every bite. Add chocolate into the oat mixture.
  4. Line an 8x11 pan with parchment paper, having the short ends longer. This will make the bars come out easier.
  5. Press the mixture into the pan. Keep pressing down evenly so it's packed.
  6. Refrigerate the bars for at least one hour. Take the bars out and slice with a sharp knife.
  7. You can drizzle with melted chocolate for garnish or leave them as is.
  8. Store in an airtight container for a week or in the fridge for two weeks.

Notes

Tip: you can use chocolate chunks instead of chopping the chocolate chips.

Ways to Mix Them Up

  • Add different mix ins. You can do white chocolate chips and cashew butter, or milk chocolate with peanut butter. yum.
  • Drizzle chocolate on the tops to make the granola bars feel fancier. You can even add chunks of chocolate on top.
  • Add in dried fruits for more fiber.

When You’ll Need These

  • These chocolate almond butter granola bars will be perfect to take on trips hiking, beach walking, school lunches, and for weekly meal prep.
  • Granola bars make great portion controlled snacks and you can eat them any where.
  • These chocolate bars are great finger foods for kids.
  • They’re healthy, so lets be real we need more granola bars in our lives anyway.
