Making the Lavender Blueberry Cake

Fresh lavender smells wonderful doesn’t it? Truthfully, its one of the best fresh scents you can have for all things household! Lavender is great for laundry and dish soap. But CAKE?? Lavender is not something that most people think to eat.

I would agree. I thought that eating a lavender cake would taste like a floral perfume! I was wrong!

When baked in this cake, lavender has a slightly herby flavor that resembles rosemary! The light hints of lavender give this cake a delicate and sophisticated lift.

To compliment the lavender, there is homemade blueberry jam swirled into the cake batter. However, this cake does not taste like blueberries! The jam is simply to add color to the cake.

The rich frosting on the cake is thick and fluffy and given a hint of lemon juice to add the right amount of acid to balance the sweet and herb notes.

Lavender Blueberry Cake Icing

  • Softened Butter
  • Powdered Sugar
  • Vanilla Extract
  • Juice of a Half Lemon
  • Lavender Sprig
  • Milk

What makes this lavender blueberry layer cake so easy and fun

I personally made the batter of this cake with a whisk! Not only that, but this is not a picky recipe. What’s so cool is you can let your kids help by dumping ingredients into the bowl.

There are no separate bowls. You just put all the ingredients in and stir it together. Isn’t that great?!

The frosting is super simple too! It calls for only a few ingredients and I did use a beater for it. You can take your chances with a whisk, but the frosting is super thick so I don’t recommend it. This frosting really compliments the lavender blueberry layer cake!

There are no artificial colors! Whoop whoop!! I used blueberry jam, you can also use juice from frozen blueberries, to create the purple tint to the cake and frosting.

Lavender Blueberry Layer Cake

Yield: 3 6-inch rounds, 2 8-inch rounds, or 1 bundt
Prep Time: 30 minutes
Cook Time: 33 minutes
Total Time: 1 hour 3 minutes

Ingredients

  • 2 c all purpose flour
  • 1 1/4 cup sugar
  • 1 T baking powder
  • 1/4 t salt
  • 1/2 c + 2 T milk
  • 1 t vanilla extract
  • 1/2 c melted salted butter
  • 3 large eggs
  • 2-3 small sprigs of lavender
  • 3 T blueberry jam or frozen blueberry juice

Instructions

  1. Preheat oven to 350 F. Grease your cake pans.
  2. In a large bowl, whisk together the first four ingredients. Then whisk in the next three.
  3. Once all combined, whisk in the eggs. Pull the purple buds off of the lavender and finely chop them. Add them into the batter.
  4. Swirl in the blueberry jam or juice. If the jam is too thick to swirl in the batter, you may microwave it.
  5. Pour batter into greased pans and bake for 30-35 minutes. A toothpick should come out clean. cool cakes and flip them out onto a rack.
  6. This recipe makes enough for 3 6-inch rounds, 2 8-inch rounds, or 1 bundt cake pan.

Lavender Cake Frosting

Yield: Enough frosting for the lavender cake recipe.
Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients

  • 1/2 c softened salted butter
  • 2 c powdered sugar
  • 1 t vanilla extract
  • juice of 1/2 lemon
  • 1-2 sprigs of lavender
  • 3 t milk

Instructions

1. Beat butter with a mixer until fluffy. Add in the powdered sugar. Beat together.

2. Add in the vanilla, lemon juice, and increase the speed to medium.

3. Chop the lavender finely and add it to the frosting. Add in the milk.

4. If you desire the frosting to be colored, add in the blueberry jam and beat together.
